I contacted university IT support, who confirmed that the email client, not the university, demands this. As a result, I’m curious if anyone else is having similar issues, and if so, is there a solution other than switching apps or starting over?

I understand your concerns, but in order to continue accessing your University account externally through the Email app, you will need to approve the permissions presented to you.
I apologize for not including this in the original article. My other email addresses aren’t a challenge for me to use (Hotmail and Gmail). Why is it that the Email app needs me to grant it admin access to my university email?
